A comforting and flavorful dish combining crispy potatoes, rich eggs, and melted cheddar cheese, perfect for breakfast or any meal.

  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and cook until golden brown and crispy, about 10-15 minutes, stirring occasionally.
  3. While the potatoes are cooking, whisk together the eggs in a bowl with salt and pepper.
  4. If using, add the diced ham or bacon to the skillet with the potatoes and cook for an additional 2-3 minutes until warm.
  5. Pour the whisked eggs over the potato and meat mixture in the skillet. Cook gently, stirring occasionally, until the eggs are just set.
  6. Sprinkle shredded cheddar cheese over the scramble, allowing it to melt nicely.
  7. Serve hot, garnished with green onions if desired.

Notes

Feel free to swap out cheddar for your favorite cheese or use different meats based on your preference. For a vegetarian version, omit the meat and add sautéed veggies.
