A comforting dish combining creamy, cheesy goodness with satisfying smoky sausage and perfectly roasted baby potatoes, ideal for busy weeknights.

  • 1 pound smoked sausage (halal-certified, no pork)
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix (halal-certified)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and cut them in halves or quarters, depending on their size.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. Combine the ranch seasoning, garlic powder, onion powder, and black pepper in a small bowl.
  5. Toss the halved potatoes with olive oil and half of the ranch seasoning mixture until they are well coated in a large bowl.
  6. Line a baking sheet with parchment paper or grease it lightly for easy cleanup.
  7. Spread the seasoned potatoes evenly on the baking sheet.
  8. Scatter the sliced smoked sausage over the potatoes.
  9. Bake for 35-40 minutes, stirring halfway through, until the potatoes are golden and tender.
  10. Remove from the oven and sprinkle the shredded cheddar cheese over everything. Return to the oven for an additional 5 minutes to melt the cheese.
  11. Garnish with freshly chopped parsley and serve hot, optionally with sour cream for a creamy finish.

Notes

For a lighter option, feel free to swap smoked sausage with chicken or turkey sausage. Serve with a fresh salad or steamed veggies.
