Ingredients

  • 12 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese (optional)
  • 1 cup cooked breakfast sausage or bacon (chopped)
  • 1 cup diced bell peppers
  • ½ cup chopped onions
  • 1 cup frozen hash browns (thawed)
  • Salt and black pepper to taste
  • 68 large flour tortillas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and milk until well combined. Season with salt and black pepper.
  3. Stir in the chopped sausage or bacon, bell peppers, onions, and thawed hash browns until everything is evenly mixed.
  4. Pour the mixture onto a greased sheet pan. Spread it out evenly and bake for 20-25 minutes, or until the eggs are set and golden.
  5. Remove from the oven and sprinkle with cheddar, adding mozzarella if desired. Return to the oven for another 5 minutes until the cheese is fully melted.
  6. Once slightly cooled, cut the baked mixture into sections. Place each section onto a flour tortilla and wrap up burrito-style. Enjoy!

Notes

Serve with fresh salsa, avocado slices, or a dollop of sour cream. Store leftovers in an airtight container in the fridge for 3-4 days.
