A creamy and comforting pasta dish with cheddar cheese, bacon, and tender chicken, all enveloped in a rich ranch-flavored sauce.

  • 2 cups cheddar cheese, shredded
  • 6 strips bacon
  • Salt/Pepper to taste
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 small boneless skinless chicken breasts
  • 2 cups uncooked pasta (Rotini recommended)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon garlic, minced
  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix

Instructions

  1. Cook the bacon in a large skillet over low heat until crispy, then set it aside and keep the drippings.
  2. Slice the chicken breasts and season with salt, pepper, onion powder, and Italian seasoning. Sear in the bacon drippings until cooked through, then cube the chicken.
  3. Boil salted water in a separate pot and cook the rotini until al dente, then drain.
  4. Melt butter in the skillet and sauté the garlic until fragrant. Sprinkle in flour and gradually whisk in half and half.
  5. Stir in ranch seasoning and cheddar cheese until smooth.
  6. Add the cooked pasta and cubed chicken to the sauce, gently folding everything together. Top with reserved chopped bacon and serve warm.

Notes

Serve garnished with fresh parsley and pair with a simple green salad or garlic bread.
