  • 1 cup bell peppers, sliced

  • 1 lb seasoned chicken, diced
  • 2 tbsp fajita seasoning

  • Cheese (optional)

Instructions

  1. Cook the penne pasta according to the package instructions. Once cooked, drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the diced onions and bell peppers, sautéing them until tender.
  4. Incorporate the seasoned chicken into the skillet, cooking it until it’s no longer pink.
  5. Stir in the diced tomatoes and fajita seasoning, ensuring everything is well mixed.
  6. Gently combine the cooked pasta with the chicken and vegetable mixture, stirring to coat evenly.
  7. Serve warm, adding cheese on top if desired.

Notes

For a lighter option, substitute grilled shrimp or tofu for the chicken. Feel free to swap out the bell peppers for other vegetables like zucchini or mushrooms.
