A creamy and savory chicken dish featuring tender chicken breasts, fresh spinach, and a rich Parmesan sauce, perfect for weeknight meals or special gatherings.

  • 2 chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Pasta or baked potato for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Sear them until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, add minced garlic. Sauté until it becomes fragrant.
  4. Add fresh spinach and cook until it wilts down.
  5. Pour in heavy cream and bring it to a gentle simmer. Stir in Parmesan cheese until it melts and is well combined.
  6. Return the chicken to the skillet, spooning the creamy sauce over the top.
  7. Serve with pasta or a baked potato, pouring any additional sauce over the dish for extra flavor.

Notes

For a lighter sauce, substitute heavy cream with half-and-half or use Greek yogurt. You can also add sun-dried tomatoes or mushrooms for variation.
