Chicken Fried Chicken

A classic Southern dish of juicy, breaded chicken breasts fried to golden perfection and served with rich homemade gravy.

Ingredients

  • 68 thin sliced chicken breasts
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cup buttermilk
  • 1 egg
  • 1 Tbs hot sauce
  • Oil for frying
  • 1/4 cup reserved oil from frying
  • 1/3 cup flour (for gravy)
  • 2 cups milk
  • Salt & pepper (to taste)

Instructions

  1. Heat oil in a deep fryer or large pan to about 325°F.
  2. In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, 1 tsp salt, 1 tsp pepper, and garlic powder.
  3. In another bowl, combine buttermilk, egg, and hot sauce. Whisk until well-blended.
  4. Dredge each chicken breast in the flour mixture. Then, dip them in the egg mixture, and finally back into the flour, pressing down to coat thoroughly.
  5. Carefully place the breaded chicken into the hot oil. Fry for 3 to 5 minutes on each side until golden brown. Remove and drain on a paper towel-lined plate.
  6. For the gravy, in a large pan, heat 1/4 inch of reserved oil from frying on medium-high. Stir in 1/3 cup of flour until absorbed, then cook for about 1 minute.
  7. Slowly add the milk, whisking continuously. Heat until the gravy thickens, and season with salt and pepper to taste.
  8. Before serving, pour the gravy generously over the fried chicken.

Notes

To keep fried chicken crispy, avoid overcrowding the pan while frying. Use a meat thermometer to ensure an internal temperature of 165°F.
