A delightful, juicy chicken kofta dish with a cool, tangy garlic yogurt sauce, perfect for any occasion.

Ingredients

  • 500 grams ground chicken
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of salt
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine the ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, salt, and black pepper. Mix thoroughly until well combined.
  2. Shape the mixture into small oval-shaped koftas, roughly the size of an egg.
  3. Preheat the grill, brushing it lightly with olive oil to prevent sticking.
  4. Grill the koftas for about 10-12 minutes. Turn them occasionally to ensure even cooking until fully cooked through.
  5. While the koftas are grilling, prepare the garlic yogurt sauce. In a separate bowl, stir together the yogurt, lemon juice, and a pinch of salt.
  6. Serve the grilled koftas warm alongside the garlic yogurt sauce for dipping.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently to preserve juiciness. For freezing, arrange on a baking sheet and freeze individually before transferring to a freezer bag.
