Savory ground chicken seasoned simply, piled into crisp lettuce leaves, and finished with crunchy toppings for a light, low-carb dinner.

  • 1 pound ground chicken
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Lettuce leaves (butter or iceberg) for wrapping
  • Optional toppings: chopped green onions, shredded carrots, water chestnuts

Instructions

  1. Heat the oil in a large skillet over medium heat until it shimmers.
  2. Add the diced onion and minced garlic. Cook, stirring, until the onion is softened and the garlic is fragrant, about 2–3 minutes.
  3. Turn the heat to medium-high and add the ground chicken. Break it up with a spatula and cook until browned and no pink remains, about 6–8 minutes.
  4. Stir in the diced bell pepper, soy sauce, hoisin sauce, and sesame oil. Season lightly with salt and pepper and cook another 3–4 minutes so the flavors meld and the peppers soften.
  5. Remove the skillet from the heat and let the mixture cool a minute or two so it’s easy to handle.
  6. Spoon the chicken into lettuce leaves, add optional toppings, and serve immediately.

Notes

Ground chicken can be substituted with ground turkey or pork. Use low-sodium soy sauce for a healthier option. Hoisin can be substituted with brown sugar and soy in a pinch.
