Chicken Madeira

A comforting dish of tender chicken breasts topped with a rich mushroom sauce and gooey mozzarella cheese, perfect for special occasions or weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken to the skillet and cook for 5–7 minutes per side until golden brown and cooked through. Set aside.
  4. In the same skillet, add sliced mushrooms and sauté for 4–5 minutes until softened and browned.
  5. Pour in Madeira wine and chicken broth, scraping the pan to lift browned bits.
  6. Bring to a simmer and let reduce for 3–5 minutes.
  7. Stir in butter until melted and combined.
  8. Return the chicken to skillet, spoon sauce over each breast, and top with mozzarella cheese.
  9. Cover and let cook until cheese has melted.
  10. Garnish with chopped parsley before serving.

Notes

For a thicker sauce, allow it to simmer longer. Serve with creamy mashed potatoes or rice to soak up the sauce.
