A classic dish of tender chicken cutlets in a rich, creamy mushroom sauce with the delightful flavors of sweet Marsala wine.

Ingredients

  • 4 thin chicken cutlets
  • 1 cup all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup mushrooms, sliced
  • 1 cup Marsala wine
  • 1/2 cup heavy cream
  • Fresh parsley for garnish

Instructions

  1. In a shallow dish, season the flour with salt and pepper. Dredge each chicken cutlet in the mixture.
  2. Heat olive oil in a large skillet over medium heat and cook chicken cutlets for 3-5 minutes on each side until golden brown. Remove and set aside.
  3. Add sliced mushrooms to the same skillet and sauté until browned.
  4. Pour in Marsala wine, scrape the bottom of the skillet, and let it simmer.
  5. Stir in heavy cream and cook until the sauce thickens.
  6. Return chicken cutlets to the skillet, ensuring they are well coated in the sauce.
  7. Plate the Chicken Marsala and garnish with fresh parsley.

Notes

Consider using organic chicken, or a non-alcoholic alternative for Marsala wine. Pair with mashed potatoes or arugula salad.
