  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 apples, cored and sliced
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Place them in the skillet and simmer until golden brown—about 5 to 7 minutes per side. Remove and set aside.
  3. In the same skillet, toss in the sliced onions and apples. Sauté for roughly 5 minutes until they soften.
  4. Deglaze the pan by pouring in apple cider and chicken broth, scraping any flavorful brown bits from the bottom.
  5. Return the chicken to the skillet, cover, and let it simmer for 15 to 20 minutes, or until the chicken is fully cooked.
  6. Serve hot, garnished with fresh thyme.

Notes

Serve with rice or crusty bread. Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of chicken broth.
