  • 1/4 cup vegetable oil
  • 1/2 cup flour
  • 1 1/2 teaspoons seasoned salt
  • 2 eggs
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups panko breadcrumbs
  • 1/3 cup Parmesan cheese
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 cup marinara sauce
  • 1 1/2 cups mozzarella cheese
  • To garnish fresh parsley

Instructions

  1. Preheat your oven to 425°F.
  2. Set up three shallow pans for the flour, eggs, and breadcrumbs.
  3. Whisk the eggs until frothy.
  4. Halve the chicken breasts lengthwise, cover with plastic wrap, and pound to about ½ inch thick.
  5. Pat the chicken dry and season generously with salt and pepper.
  6. Coat each piece in flour, shaking off the excess.
  7. Submerge the floured chicken in the egg mixture, letting the extra drip off.
  8. Roll the chicken in panko breadcrumbs, ensuring complete coverage.
  9. Heat vegetable oil in a skillet over medium-high heat until shimmering.
  10. Add the chicken to the hot oil; cook for 3-4 minutes on each side until golden brown.
  11. Transfer the crispy chicken to a wire rack to keep it crispy.
  12. Arrange the chicken pieces on a light-colored baking sheet, top with marinara sauce, and sprinkle with mozzarella cheese.
  13. Bake uncovered for 12 minutes. For a bubbly finish, broil for 1-2 minutes, watching closely.
  14. Sprinkle fresh parsley over the top before serving.
