A comforting Chicken Parmesan recipe featuring crispy cutlets, marinara sauce, and melty mozzarella, perfect for a cozy dinner or special occasion.

  • 2 eggs
  • 3 cloves garlic, grated
  • 2 tablespoons chopped parsley
  • 6 chicken cutlets
  • 1 cup panko
  • 1/2 cup bread crumbs
  • 1/2 cup Parmesan cheese
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 cup avocado oil
  • 1 jar (24 ounces) marinara sauce
  • 1/2 cup shredded mozzarella

Instructions

  1. Preheat your oven to 400°F (204°C) and grease a baking dish.
  2. Whisk together the eggs, parsley, garlic, salt, and pepper until smooth in a bowl.
  3. Dip each chicken cutlet into the egg mixture, ensuring full coverage. Let them marinate for 15-45 minutes for better flavor.
  4. Mix the panko, breadcrumbs, Parmesan cheese, basil, oregano, garlic powder, and salt in a separate bowl.
  5. Coat the marinated chicken cutlets with the breadcrumb mixture, pressing lightly to help it stick well.
  6. Heat avocado oil in a skillet over medium heat. Add chicken and fry for about 5 minutes on each side, until golden brown.
  7. Transfer to a baking sheet. Top each cutlet with marinara sauce and shredded mozzarella cheese.
  8. Bake in your preheated oven for 17-20 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
