Chicken Parmesan

A classic Italian-American dish featuring tender chicken with a crunchy exterior, smothered in marinara and gooey mozzarella.

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh basil, chopped (optional, for garnish)
  • Cooked spaghetti or pasta of your choice (optional, for serving)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place the chicken breasts between sheets of plastic wrap and gently pound to about 1/2 inch thickness.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. Set up three shallow dishes: one with flour, a second with the beaten eggs, and a third with breadcrumbs mixed with grated Parmesan.
  5. Dredge each chicken breast in flour, dip into the egg, and then coat in the breadcrumb mixture.
  6. Heat olive oil in a large skillet over medium heat. Cook each chicken breast for 3-4 minutes per side until golden brown.
  7. Transfer the chicken to a baking dish. Spoon marinara sauce over each breast and sprinkle with shredded mozzarella.
  8. Bake for 10-15 minutes, or until the cheese is melted and the chicken is cooked through.
  9. Let rest for 5 minutes before serving. Optionally garnish with fresh basil and serve hot alongside cooked spaghetti or pasta.

Notes

For substitutions, use pesto instead of marinara, or gluten-free breadcrumbs if needed. Best served on spaghetti with extra marinara.
