A classic Italian-American comfort food featuring crispy breaded chicken breasts topped with marinara sauce and melted mozzarella cheese.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 1/2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil or parsley for garnish (optional)
  • Cooked spaghetti for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pound the chicken breasts until they are an even thickness. This step helps with uniform cooking. Season both sides with salt and pepper.
  3. Set up your dredging station: place flour on one plate, whisk together eggs and water in a bowl, and mix breadcrumbs with Parmesan on a separate plate.
  4. Dredge each chicken breast in the flour, dip it in the egg mixture, then coat it with the breadcrumb and Parmesan mixture.
  5. Heat olive oil in a skillet over medium-high heat. Add the chicken and brown for about 3-4 minutes on each side until golden.
  6. Transfer the browned chicken to a baking dish. Top with marinara sauce and shredded mozzarella.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. If desired, garnish with fresh basil or parsley and serve over spaghetti for a complete meal.

Notes

Use fresh ingredients for the best flavor. This dish can also be made with eggplant or zucchini for a lighter option.
