  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs, adding a pinch of salt and pepper for flavor in a shallow bowl.
  3. Combine the breadcrumbs and grated Parmesan cheese in another bowl.
  4. Dip each chicken breast into the egg mixture, letting any excess egg drip off before coating with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat.
  6. Add the breaded chicken and fry until golden brown on both sides, about 3-4 minutes each.
  7. Transfer the browned chicken to a baking dish.
  8. Top each breast with marinara sauce and a generous sprinkle of shredded mozzarella cheese.
  9. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and the chicken is fully cooked.
  10. Garnish with fresh basil before serving, if desired.

Notes

For extra crunch, consider swapping the breadcrumbs for panko, or use gluten-free breadcrumbs if necessary for dietary preferences. Let the chicken rest after frying before adding the marinara sauce to maintain the crispiness.
