Chicken Parmesan

A classic Italian-American dish featuring crispy chicken, rich marinara, and melty mozzarella, perfect for weeknight dinners or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts (about 600 g total)
  • 100 g breadcrumbs (Italian-style or plain)
  • 50 g grated Parmesan cheese
  • 2 eggs, beaten
  • 60 g all-purpose flour
  • 250 ml marinara sauce
  • 200 g mozzarella cheese, shredded or sliced
  • 40 ml olive oil
  • Salt & pepper, to taste
  • 2 g garlic powder
  • 5 g fresh basil or parsley, chopped (for garnish)

Instructions

  1. Pound the chicken to an even thickness of about 1.5 cm, then season with salt, pepper, and garlic powder.
  2. Dredge each chicken breast in flour, dip in beaten eggs, and coat with breadcrumb and Parmesan mixture.
  3. Fry each chicken breast in hot olive oil for 3–4 minutes on each side until golden brown.
  4. Assemble the cooked chicken in a baking dish, spoon marinara sauce over, and top with mozzarella cheese.
  5. Bake in a preheated oven at 200°C (400°F) for around 15 minutes or until cheese is bubbly and golden.
  6. Garnish with fresh basil or parsley and serve with spaghetti or salad.

Notes

For a gluten-free version, swap breadcrumbs for almond flour. Avoid microwaving when reheating to keep the chicken crispy.
