A classic Italian-American dish featuring tender chicken cutlets, rich tomato sauce, and melted cheese, perfect for family dinners or special occasions.

  • 4 chicken cutlets
  • Salt, to taste
  • Pepper, to taste
  • 1 cup flour
  • 2 eggs, beaten
  • 1 cup bread crumbs
  • 1/2 cup olive oil
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 can San Marzano tomatoes, crushed
  • Fresh basil, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season your chicken cutlets generously with salt and pepper.
  3. Dredge each cutlet in flour, coating well, and shake off any excess.
  4. Dip the chicken into beaten eggs, letting any excess drip off.
  5. Coat the cutlets in bread crumbs, pressing lightly to ensure it sticks.
  6. Heat olive oil in a skillet over medium heat and fry the chicken until golden brown on both sides.
  7. Prepare the tomato sauce by combining crushed San Marzano tomatoes, minced garlic, and chopped basil in a saucepan; simmer for 15 minutes.
  8. Arrange the fried chicken in a baking dish, cover with the tomato sauce, and sprinkle with mozzarella and Parmesan cheeses.
  9. Bake for 20-25 minutes until the cheese is melted and bubbly.
  10. Serve hot, paired with pasta or a fresh salad.
