A classic Italian-American dish featuring tender, crispy chicken topped with marinara and bubbling cheese, perfect for family dinners or date nights.

  • 2 boneless, skinless chicken breasts, cut in half horizontally
  • ½ cup all-purpose flour
  • 1 cup Italian-seasoned breadcrumbs
  • Salt and freshly ground black pepper, to taste
  • ½ tsp garlic salt
  • 1 tsp garlic powder
  • ½ tsp seasoned salt
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cups marinara or red pasta sauce
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded parmesan cheese
  • 2 large eggs, beaten
  • 2 tablespoons milk

Instructions

  1. Slice each chicken breast in half horizontally, creating four thin fillets. Season with salt and pepper.
  2. Dredge each chicken piece in flour. Dip into the egg and milk mixture, then coat with breadcrumbs. For extra crunch, repeat the egg and breadcrumb steps.
  3. Heat the olive oil and butter in a skillet over medium heat. Fry the chicken for 3-4 minutes on each side until it turns golden brown.
  4. Spread marinara sauce over a baking sheet and place the fried chicken on top. Sprinkle with mozzarella and Parmesan cheese.
  5. Broil for 2-3 minutes, or until the cheese is melted and bubbly.
  6. Plate and serve immediately.

Notes

For an extra crispy coating, consider using panko breadcrumbs or double-dipping your chicken in the egg and breadcrumbs.
