A comforting blend of crispy chicken, tangy marinara sauce, and melted mozzarella, perfect for busy weeknights or family gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup seasoned breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 3 tbsp extra virgin olive oil
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Pat the chicken breasts dry with paper towels. Season them generously with salt and pepper.
  3. Set up a breading station by placing the flour in one bowl, the beaten eggs in another, and mixing the seasoned breadcrumbs with the Parmesan in a third bowl.
  4. Dredge each chicken breast first in the flour, then dip it into the egg, and finally coat it thoroughly with the breadcrumb mixture.
  5. Heat the olive oil in a skillet over medium-high heat. Carefully place the chicken in the skillet, frying for about 4-5 minutes on each side until golden brown.
  6. Transfer the fried chicken to the prepared baking sheet.
  7. Spoon marinara sauce over each piece of chicken, followed by a sprinkle of shredded mozzarella.
  8. Bake in the oven for approximately 20 minutes, or until the cheese is bubbly and golden brown.

Notes

For a healthier twist, consider serving it alongside a crisp salad or steamed vegetables. Store leftovers in an airtight container and reheat in the oven for best results.
