A classic Italian-American dish featuring breaded chicken topped with marinara sauce and melted cheese, perfect for any occasion.

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 egg
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Dip each breast into the beaten egg, ensuring it’s fully coated.
  4. Coat each breast with breadcrumbs, pressing gently to adhere.
  5. Heat a few tablespoons of olive oil in a skillet over medium heat.
  6. Fry the chicken cutlets for about 4-5 minutes on each side until they’re golden brown.
  7. Spread a layer of marinara sauce on the bottom of a baking dish.
  8. Place the fried chicken cutlets on top of the sauce, and add more marinara over each piece.
  9. Sprinkle mozzarella and parmesan cheese evenly on top.
  10. Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
  11. Garnish with fresh herbs if desired and serve hot.

Notes

For an extra crispy coating, double-dip the chicken in egg and breadcrumbs. Use a cast iron skillet for frying for even heat distribution. Let the cooked chicken rest for a few minutes before serving to retain its juices.
