A comforting classic featuring crispy breaded chicken topped with marinara sauce and melted cheese.

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. Prepare a breading station: Place the flour in one bowl, beaten eggs in another, and combine the breadcrumbs with grated Parmesan in a third bowl.
  4. Dredge each chicken breast in the flour first, ensuring it’s fully coated. Dip into the beaten eggs, letting any excess drip off, and then roll it in the breadcrumb mixture until completely coated.
  5. Heat olive oil in a skillet over medium heat. Fry the breaded chicken for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
  6. Spread a layer of marinara sauce in a baking dish to cover the bottom. Place the fried chicken on top.
  7. Top the chicken with more marinara sauce and sprinkle with mozzarella cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh basil if desired and serve immediately. Enjoy leftovers in a sandwich!

Notes

Pound the chicken to an even thickness for uniform cooking. For a lighter version, consider baking instead of frying.
