A comforting one-pan meal that combines the rich flavors of Chicken Parmesan with pasta, perfect for busy weeknights.

Ingredients

  • 8 oz. penne pasta
  • 1 lb. boneless, skinless chicken breasts, diced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced chicken, seasoning with salt, pepper, garlic powder, and Italian seasoning. Sauté for about 5-7 minutes until cooked through and browned.
  2. Stir in the marinara sauce, bringing the mixture to a gentle simmer.
  3. Add the penne pasta and pour in 2 cups of water. Stir, cover, and let it simmer for about 10-12 minutes until the pasta is al dente and most water is absorbed.
  4. Remove the lid and add mozzarella and Parmesan cheese. Cook for an additional 2-3 minutes, stirring until melted and bubbly.
  5. Garnish with fresh basil if desired, and serve warm.

Notes

For added crunch, top with panko breadcrumbs mixed with Parmesan and broil for a couple of minutes before serving.
