A classic Chicken Parmesan recipe featuring crispy chicken, rich tomato sauce, and gooey cheese, perfect for family gatherings or a cozy weeknight dinner.

  • 16 ounces pasta (spaghetti, fettuccini, linguini, or a pasta of your choice)
  • 1 pound chicken breast (cut lengthwise in half (butterfly))
  • Salt and pepper (to season both sides of each chicken breast)
  • 2 large eggs (lightly beaten)
  • 1 cup Parmesan cheese (grated, divided (½ for breading, ½ for cheese topping))
  • 1 cup Panko breadcrumbs
  • ¼ cup olive oil (extra virgin)
  • 24 ounces pasta sauce (or your favorite pasta sauce)
  • 8 ounces Mozzarella cheese (cut into 69 thin slices; grate remaining mozzarella cheese)

Instructions

  1. Preheat your oven to 375°F (190°C) and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season both sides of the chicken breast halves with salt and pepper. Dip each piece into the beaten eggs.
  3. Coat the chicken in a mixture of Panko breadcrumbs and half the grated Parmesan cheese.
  4. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken and cook for about 3-4 minutes on each side until golden brown and fully cooked. Remove from heat.
  5. Spread a layer of pasta sauce on the bottom of a baking dish. Place the cooked pasta on top, followed by the fried chicken pieces. Top with the remaining pasta sauce, mozzarella cheese slices, and the rest of the grated Parmesan cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Notes

For best results, marinate chicken in Italian seasoning before breading. Pair with a side salad or garlic bread.
