A flavorful Chicken Shawarma with a creamy garlic sauce that transports you to the vibrant street markets of the Middle East.

  • 1/4 cup plain yogurt
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 4 cloves minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Pita bread or flatbread for serving
  • Sliced cucumbers for serving
  • Sliced tomatoes for serving
  • Sliced red onion for serving
  • Chopped fresh parsley for garnish
  • 1 cup mayonnaise for creamy garlic sauce
  • 2 tablespoons lemon juice for creamy garlic sauce
  • 4 cloves minced garlic for creamy garlic sauce
  • Salt and pepper to taste for creamy garlic sauce

Instructions

  1. In a large bowl, combine yogurt, olive oil, lemon juice, minced garlic, ground cumin, ground coriander, smoked paprika, allspice, turmeric, salt, and pepper. Mix well to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  3. Preheat your grill or oven to medium-high heat (about 400°F/200°C if baking).
  4. Grill the marinated chicken thighs for about 5-7 minutes on each side until golden brown and thoroughly cooked. If using the oven, bake for 20-25 minutes, flipping halfway through.
  5. While the chicken is cooking, prepare the creamy garlic sauce by mixing together mayonnaise, lemon juice, minced garlic, salt, and pepper until smooth. Refrigerate until serving.
  6. Once the chicken is fully cooked, slice it thinly.
  7. Serve sliced chicken in warmed pita or flatbread, topped with sliced cucumbers, tomatoes, red onions, and creamy garlic sauce.
  8. Garnish with chopped fresh parsley before serving.

Notes

Marinate the chicken overnight for enhanced flavor. Feel free to add spicy ingredients for extra heat.
