A flavorful Chicken Shawarma recipe with tender chicken thighs and a creamy garlic sauce, perfect for busy weeknights or gatherings.

Ingredients

Scale
  • 2 lbs chicken thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 3 tablespoons tahini
  • Juice of 1 lemon
  • Pita bread or flatbreads for serving
  • Vegetables for garnish (e.g., lettuce, tomatoes, cucumbers)

Instructions

  1. In a bowl, combine the olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, salt, and pepper.
  2. Add the chicken thighs to the bowl, ensuring they are well coated in the marinade. For the best flavor, let them marinate for at least 1 hour—overnight is even better!
  3. Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until cooked through and nicely charred.
  4. While the chicken is grilling, prepare the garlic sauce by mixing yogurt, tahini, lemon juice, and additional minced garlic until smooth and creamy.
  5. Once the chicken is done, allow it to rest for a few minutes. Then, slice it thinly against the grain.
  6. Serve the chicken on warm pita or flatbreads, drizzle with garlic sauce, and top with fresh veggies.

Notes

Consider adding smoked paprika or cayenne for extra flavor. Marinate overnight for best results.
