Chicken with Buttered Noodles

A comforting weeknight meal featuring tender chicken and buttery noodles, ready in under 30 minutes.

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz egg noodles
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon dried Italian seasoning
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then add to the skillet. Cook for about 5-7 minutes until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add 2 tablespoons of butter and let it melt. Add minced garlic and Italian seasoning, cooking for 1-2 minutes until fragrant.
  4. Toss the cooked noodles into the skillet, adding the remaining tablespoon of butter. Stir to coat the noodles thoroughly.
  5. Return the cooked chicken to the skillet. If using Parmesan, sprinkle it over the chicken and noodles. Finish with fresh parsley for garnish.
  6. Serve warm and enjoy!

Notes

For variations, consider adding cream for richness, sautéed vegetables for nutrition, or red pepper flakes for spice.
