A quick and vibrant Chicken Zucchini Stir Fry loaded with protein and fresh veggies, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat two tablespoons of olive oil over medium-high heat.
  2. Add the sliced chicken pieces. Cook until they are browned and fully cooked, about 5–7 minutes.
  3. Stir in the minced garlic for about 1 minute until fragrant.
  4. Add the sliced zucchini and bell pepper into the skillet.
  5. Pour in the soy sauce and mix everything well.
  6. Continue to cook for another 3–5 minutes, or until the vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes

Best enjoyed garnished with sesame seeds or chopped green onions, and served over steamed jasmine rice.
