A simple yet satisfying dish featuring chickpeas, sun-dried tomatoes, and eggs, perfect for brunch or a quick dinner.

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 2 eggs
  • 1/4 cup sun-dried tomatoes, chopped
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Heat a good amount of olive oil in a skillet over medium heat.
  2. Add the chickpeas and sun-dried tomatoes to the skillet, cooking until warmed through.
  3. Create two small wells within the chickpea mixture and carefully crack an egg into each.
  4. Cover the skillet with a lid and continue cooking until the eggs reach your desired doneness.
  5. Season with salt and pepper before serving.

Notes

Serve over fresh greens with lemon juice, or pair with toasted sourdough for added crunch. Drizzle with tahini for more flavor.
