A quick and delicious Chinese Chicken stir-fry with vibrant vegetables and a savory sauce, perfect for weeknight dinners.

  • 1 lb chicken breast, diced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 cup broccoli florets
  • 1 tbsp cornstarch
  • 2 tbsp water
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Mix the diced chicken with soy sauce, sesame oil, minced garlic, and grated ginger in a bowl. Allow to marinate for about 15 minutes.
  2. Heat a pan over medium heat and add the marinated chicken. Cook until browned and fully cooked through, around 7-10 minutes.
  3. Incorporate sliced bell pepper, onion, and broccoli florets. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.
  4. Combine cornstarch with water to create a slurry. Pour into the pan, stirring continuously until the sauce thickens.
  5. Season with salt and pepper to taste. Serve hot over cooked rice.

Notes

For a different protein option, swap chicken for tofu or shrimp. Use pre-packaged stir-fry veggies if short on time.
