A delightful twist on breakfast, merging the flavors of cinnamon rolls with the goodness of oatmeal. Perfect for brunch or a sweet snack!

  • 1 ½ cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ¼ cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • For the Swirl:
  • 1 tablespoon melted butter or coconut oil
  • 1 tablespoon brown sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8 inch baking dish.
  2. Whisk together the rolled oats, baking powder, ½ teaspoon cinnamon, and salt in a large bowl.
  3. Whisk the egg, milk, maple syrup, 2 tablespoons of melted butter, and vanilla extract in another bowl until combined.
  4. Pour the wet ingredients into the oat mixture and stir gently until just mixed.
  5. Layer half of the oatmeal mixture into the greased baking dish.
  6. Combine the remaining 1 tablespoon of melted butter, brown sugar, and ½ teaspoon cinnamon to create the swirl mixture in a small bowl.
  7. Sprinkle half of this cinnamon-sugar mixture over the oatmeal layer in the dish.
  8. Pour the remaining oatmeal mixture on top of the cinnamon-sugar layer.
  9. Finish by sprinkling the rest of the cinnamon-sugar mixture over the top.
  10. Bake in the preheated oven for 25-30 minutes, or until the oats are set and lightly golden brown.
  11. Allow to cool slightly before cutting into squares.

Notes

Use quick oats for a softer texture; avoid overmixing the wet and dry ingredients to keep the squares light and fluffy.
