A deliciously moist loaf combining the flavors of cinnamon rolls with the nutritional boost of cottage cheese, perfect for breakfast or snacks.

  • 2 cups cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan to prevent sticking.
  2. Combine cottage cheese, rolled oats, honey, eggs, and vanilla extract in a blender. Blend until smooth and creamy.
  3. Whisk together the protein powder, cinnamon, baking powder, baking soda, and salt in a separate bowl.
  4. Fold the wet mixture into the dry ingredients until just combined.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan, then transfer to a wire rack to cool completely. Slice and enjoy!

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator. Reheat slices in the microwave for about 15-20 seconds.
