A delightful blend of cinnamon rolls and cottage cheese, perfect for breakfast or dessert.

Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. Combine the cottage cheese, eggs, maple syrup or honey, and vanilla extract in a mixing bowl. Mix until smooth.
  3. Whisk together the oats, baking powder, cinnamon, and salt in another bowl.
  4. Gradually mix the dry ingredients into the wet ones. Stir until fully combined.
  5. Fold in the optional nuts and raisins or chocolate chips if using.
  6. Pour the batter into the greased loaf pan and spread it evenly.
  7. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for a few minutes before slicing. Enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4-5 days. You can also freeze the slices for up to 2 months.
