A delightful breakfast twist combining the softness of cinnamon rolls and the crispiness of French toast.

  • 12 slices white bread (soft sandwich bread, brioche, or challah)
  • 3 tbsp butter, softened (plus more for cooking)
  • ¼ cup light brown sugar
  • 1 tsp cinnamon
  • 2 eggs
  • 3 tbsp milk
  • 3 tbsp granulated sugar
  • 1 tsp cinnamon (for coating)
  • Powdered sugar (optional, for serving)

Instructions

  1. Flatten the bread: Use a rolling pin or your hands to gently flatten each slice of bread.
  2. Make the cinnamon filling: In a small bowl, mix the softened butter, brown sugar, and cinnamon until smooth. Spread this mixture over each slice of bread.
  3. Roll them up: Tightly roll each slice into a log and set them aside.
  4. Prepare the egg mixture: In another bowl, whisk together eggs and milk until well combined.
  5. Dip and cook: Heat a nonstick skillet over medium heat. Dip each roll-up into the egg mixture and cook for 2-3 minutes on each side until golden brown and crispy.
  6. Coat in cinnamon sugar: While the roll-ups are still warm, roll them in a mixture of granulated sugar and cinnamon.
  7. Serve and enjoy: Dust with powdered sugar or drizzle with maple syrup, or serve with a cream cheese glaze.

Notes

For the best texture, use fresh bread that’s slightly stale. Feel free to add nuts or chocolate for variations.
