  • 1/4 cup brown sugar
  • 1/4 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)

Instructions

  1. Preheat your skillet over medium heat.
  2. Whisk together flour, baking powder, sugar, and salt until completely mixed.
  3. Combine the milk, egg, and melted butter until smooth in another bowl.
  4. Fold the wet ingredients into the dry mixture until just combined; it’s okay if the batter is lumpy.
  5. Mix together the cinnamon and brown sugar to create the swirl topping in a small bowl.
  6. Pour the pancake batter into the skillet, then swirl the cinnamon mixture on top.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
  8. Mix the powdered sugar with 1 tablespoon of milk until smooth for the icing, then drizzle over the pancakes before serving.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. Almond milk can be used for a dairy-free option.
