Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, whisk the milk, egg, and melted butter until smooth.
  3. Gently combine the two mixtures, being careful not to over-mix—it’s okay to have a few lumps.
  4. In a small bowl, mix the cinnamon and brown sugar together.
  5. Preheat a non-stick skillet over medium heat for optimal cooking.
  6. Pour about 1/4 cup of pancake batter onto the skillet and sprinkle the cinnamon mixture in a swirl pattern over the batter.
  7. Cook until bubbles appear on the surface, then flip the pancake. Cook until both sides are golden brown.
  8. For the glaze, whisk together the powdered sugar, milk, and vanilla until smooth.
  9. Serve the pancakes warm, drizzled with the glaze for a sweet finishing touch.
