A delightful twist on classic French toast, these muffins are tender, fluffy, and topped with a sweet cinnamon sugar crunch.

  • 6 slices of day-old bread
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 2 tablespoons melted butter
  • Additional ground cinnamon and sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Tear the bread into small pieces and set aside in a large bowl.
  3. In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
  4. Pour the egg mixture over the bread. Gently stir to ensure all pieces are well-coated.
  5. Let the mixture sit for about 10 minutes, allowing the bread to soak up the liquid.
  6. In a separate bowl, combine the brown sugar, melted butter, and a sprinkle of cinnamon for the topping.
  7. Spoon the bread mixture into the greased muffin tin, filling each cup about two-thirds full.
  8. Generously sprinkle the brown sugar topping over each muffin cup.
  9. Bake for 15-18 minutes, or until the muffins are golden and set.
