Delightful roll-ups offering a crispy exterior and sweet cinnamon-coated center, perfect for a fun breakfast experience.

  • 6 slices of bread (white or brioche)
  • 2 large eggs
  • 1/4 cup (60ml) milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted

Instructions

  1. In a small bowl, combine granulated sugar and ground cinnamon to prepare the cinnamon sugar mixture.
  2. In a shallow dish, whisk together the eggs, milk, and vanilla extract to prepare the egg mixture.
  3. Flatten each slice of bread using a rolling pin. Spread melted butter on each slice, sprinkle with the cinnamon sugar mixture, and roll tightly into a cylinder.
  4. Dip each roll-up into the egg mixture, ensuring they are fully coated. Cook the roll-ups in a lightly greased pan on all sides until golden brown, about 2-3 minutes per side.
  5. Remove toothpicks if used and serve immediately.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a microwave or toaster oven.
