6 slices of bread (white or brioche)
2 large eggs
1/4 cup (60ml) milk
1/2 teaspoon vanilla extract
2 tablespoons (25g) granulated sugar
1 teaspoon ground cinnamon
2 tablespoons (28g) unsalted butter, melted
Instructions
In a small bowl, combine granulated sugar and ground cinnamon to prepare the cinnamon sugar mixture.
In a shallow dish, whisk together the eggs, milk, and vanilla extract to prepare the egg mixture.
Flatten each slice of bread using a rolling pin. Spread melted butter on each slice, sprinkle with the cinnamon sugar mixture, and roll tightly into a cylinder.
Dip each roll-up into the egg mixture, ensuring they are fully coated. Cook the roll-ups in a lightly greased pan on all sides until golden brown, about 2-3 minutes per side.
Remove toothpicks if used and serve immediately.
