A delightful twist on a classic breakfast favorite, these roll-ups are filled with sweet cinnamon goodness and lightly fried to golden perfection.

Ingredients

  • 6 slices of bread (white or brioche)
  • 2 large eggs
  • 1/4 cup (60ml) milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted

Instructions

  1. Prepare the Cinnamon Sugar Mixture: In a small bowl, combine the granulated sugar and ground cinnamon. Mix well and set it aside.
  2. Prepare the Egg Mixture: In a shallow dish, whisk together the eggs, milk, and vanilla extract until fully blended.
  3. Assemble the Roll-Ups: Take each slice of bread and flatten it gently. Spread melted butter on one side, sprinkle a generous amount of the cinnamon-sugar mixture over it, and roll the bread tightly from one end to the other.
  4. Cook the Roll-Ups: Dip each roll-up into the egg mixture, ensuring it’s thoroughly coated. In a skillet over medium heat, cook each roll-up until golden brown on all sides, about 2-3 minutes per side.
  5. Serve: If you used toothpicks to hold them together, remove them before serving. Enjoy immediately for the best flavor!
