A beloved Italian-American classic with tender, breaded chicken, marinara sauce, and gooey melted cheese.

  • 2 large chicken breasts (about lbs total)
  • ½ cup all-purpose flour
  • 2 large eggs
  • ½ cup Italian bread crumbs
  • ½ cup Parmesan cheese (grated)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 cups marinara sauce
  • 4 oz mozzarella cheese (sliced or shredded)
  • 1 tablespoon fresh basil (finely chopped)
  • 2 tablespoons light olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the chicken breasts in half horizontally to create thinner cutlets.
  3. In a shallow dish, season the flour with salt and pepper.
  4. Beat the eggs in another shallow bowl.
  5. In a third shallow dish, combine the Italian bread crumbs and grated Parmesan cheese.
  6. Dredge each chicken breast in the seasoned flour, shaking off any excess.
  7. Dip the floured chicken into the eggs, letting the excess drip off.
  8. Coat the chicken in the bread crumb mixture, pressing down for an even coating.
  9. Heat olive oil in a large skillet over medium-high heat.
  10. Cook the breaded chicken cutlets for 4-5 minutes on each side until golden brown.
  11. Spread 1 cup of marinara sauce at the bottom of a baking dish.
  12. Place the cooked chicken on top of the marinara, and spoon the remaining sauce over the chicken.
  13. Cover with mozzarella slices, ensuring even coverage.
  14. Sprinkle with fresh basil.
  15. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

Notes

For best results, allow the chicken to rest after frying to lock in moisture. Experiment with adding herbs to the breadcrumbs or swapping out marinara sauce for pesto.
