A deliciously creamy and spicy buffalo chicken calzone, perfect for cozy nights in.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1/2 cup buffalo sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup blue cheese crumbles
  • 1/2 cup ricotta cheese
  • 1 package pizza dough
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a mixing bowl, combine the shredded chicken with buffalo sauce, mozzarella cheese, blue cheese, and ricotta. Stir until well mixed.
  3. Roll out the pizza dough on a floured surface until thin but not excessively stretched.
  4. Cut the dough into circles or squares. Place a generous scoop of the chicken mixture on one half of each dough piece.
  5. Fold the dough over and gently seal the edges using a fork.
  6. Brush the tops lightly with olive oil and season with salt and pepper.
  7. Bake for 15-20 minutes, or until golden brown and puffed up.
  8. Remove from the oven and serve warm.

Notes

Serve with a side of celery sticks and carrot sticks, and consider adding a creamy ranch or blue cheese dip.
