A flavorful and smoky chicken recipe that replicates the delicious taste of Chipotle’s chicken burrito bowl.

  • 2 pounds chicken breasts
  • 2 tablespoons chipotle chicken seasoning
  • 1 tablespoon adobo sauce
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a bowl, combine the chipotle chicken seasoning, adobo sauce, olive oil, salt, and pepper. Mix until smooth.
  2. Coat the chicken breasts with the spice mixture, making sure every piece is evenly covered.
  3. For the crockpot: Place the seasoned chicken inside and cook on low for 6-7 hours or on high for 3-4 hours until tender.
  4. For grilling: Preheat your grill to medium heat and cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Once cooked, use two forks to shred the chicken. Serve as tacos, burrito bowls, or on its own!

Notes

For a vegetarian option, substitute the chicken with cauliflower. Let the chicken rest for a few minutes after cooking to lock in the juices.
