Cottage Cheese Blueberry Cloud Bread

A light and fluffy cloud bread with cottage cheese and fresh blueberries, perfect for a healthy breakfast or snack.

Ingredients

  • 1/2 cup cottage cheese, blended smooth
  • 3 large eggs, separated
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch or arrowroot powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. Whip the egg whites with salt and baking powder until stiff peaks form.
  3. Combine the cottage cheese, egg yolks, honey or maple syrup (if using), vanilla extract, and cornstarch in a blender. Blend until smooth.
  4. Fold a third of the whipped egg whites into the cottage cheese mixture to lighten it. Then carefully fold in the remaining egg whites.
  5. Add the blueberries by folding them into the batter or scattering them on top.
  6. Drop rounds of the batter onto your prepared baking sheet, leaving space between them.
  7. Bake for 25–30 minutes, or until golden. Allow to cool before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Can be lightly toasted before serving.
