A quick and comforting mug cake that combines cottage cheese and cinnamon for a delicious treat in minutes.

Ingredients

  • 0.25 cup cottage cheese
  • 1 egg
  • 2 tbsp almond flour (or oat flour)
  • 1 tbsp maple syrup (or honey)
  • 0.5 tsp vanilla extract
  • 0.5 tsp ground cinnamon
  • 0.25 tsp baking powder
  • Pinch of salt
  • 1 tsp maple syrup (for the gooey center)
  • 0.25 tsp cinnamon
  • 1 tbsp Greek yogurt (or cream cheese)
  • Sweetener to taste (e.g. maple syrup)

Instructions

  1. In a microwave-safe mug, combine the cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and a pinch of salt. Stir until you have a smooth batter.
  2. In a separate small bowl, mix 1 teaspoon of maple syrup with 0.25 teaspoon of cinnamon to create the gooey filling.
  3. Dollop the cinnamon mixture into the center of the batter. Gently swirl it in using a knife or a toothpick.
  4. Microwave the mug on high for 60 to 90 seconds. The cake should be set and slightly puffed up.
  5. For a delicious topping, mix Greek yogurt (or cream cheese) with your chosen sweetener. Spoon it over the warm mug cake before serving.

Notes

Microwave wattages vary, so start with 60 seconds. If it’s not set, continue microwaving in 10-second increments until done.
