Delicious and protein-packed cottage cheese egg bites perfect for breakfast or a snack.

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup cooked bacon, chopped
  • Salt and pepper to taste
  • Optional: chopped vegetables (e.g. spinach, bell peppers)
  • Optional: shredded cheese for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cottage cheese, eggs, and chopped bacon in a mixing bowl.
  3. Season with salt and pepper, mixing until well combined.
  4. Fold in any chopped vegetables if desired.
  5. Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
  6. Sprinkle shredded cheese on top if you wish.
  7. Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
  8. Allow the bites to cool for a few minutes before removing them from the pan. Serve warm or store in the fridge for easy meal prep.

Notes

For fluffier bites, beat the eggs thoroughly before mixing. You can experiment with different mix-ins such as herbs or spices.
