These Cottage Cheese Egg Bites are healthy, protein-rich snacks perfect for brunch, meal prep, or a quick on-the-go snack.

  • 1/2 cup cooked bacon, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, cooked bacon, salt, and black pepper.
  3. Whisk the mixture until it’s well combined.
  4. Grease a muffin tin or use silicone muffin cups.
  5. Pour the egg mixture into the muffin cups, filling them about three-quarters full.
  6. Bake for 20-25 minutes until they’re golden and set.
  7. Let them cool for a few minutes before removing from the tin. Enjoy them warm or refrigerate for later!

Notes

These egg bites can be frozen for up to 2 months or stored in an airtight container in the fridge for 3-4 days. Reheat in the microwave for 20-30 seconds.
