These delightful cottage cheese protein discs are quick to make, filled with protein, and bursting with flavors from garlic and lemon zest.

Ingredients

  • 250 g cottage cheese
  • 2 large eggs
  • 60 g oats
  • 1 small garlic clove, grated
  • 1 tsp mustard
  • 1 tsp baking powder
  • 1/2 organic lemon, zested
  • Salt, to taste
  • Pepper, to taste
  • Paprika, to taste
  • Oil or butter for frying

Instructions

  1. In a large bowl, mix together the cottage cheese and eggs until well combined.
  2. Add in the oats, grated garlic, mustard, baking powder, and lemon zest. Stir thoroughly until everything is blended.
  3. Season the mixture to taste with salt, pepper, and paprika.
  4. Heat a splash of oil or butter in a non-stick pan over medium heat.
  5. Spoon small amounts of the mixture into the pan, shaping them into discs.
  6. Cook each side for about 3-4 minutes, or until golden brown. Flip carefully for even cooking.
  7. Once done, take the discs out of the pan and let them cool slightly before serving.

Notes

Serve warm with Greek yogurt or tahini sauce. Store leftovers in an airtight container in the fridge for up to 3 days.
