Delightful chicken bites coated in a buttery, garlic-forward sauce, perfect for any weeknight meal.

Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • Lemon wedges, for serving
  • Optional: ½ teaspoon cayenne pepper

Instructions

  1. Pat the chicken pieces dry, then season generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until golden brown, around 3–4 minutes per side. Once cooked, remove the chicken and set it aside.
  3. In the same skillet, reduce the heat to medium. Melt the butter and add the minced garlic, cooking for about 30 seconds, just until fragrant.
  4. Stir in the Dijon mustard, lemon juice, lemon zest, red pepper flakes, smoked paprika, chopped parsley, and thyme. Mix everything well.
  5. Return the chicken to the skillet, tossing it gently to coat in the buttery sauce. Let it simmer for 1–2 minutes to absorb all the flavors.
  6. Garnish with additional parsley if desired and serve hot with lemon wedges.

Notes

Feel free to swap out fresh herbs for dried or use whatever chicken parts you have on hand if you’re in a pinch.
