  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup heavy cream (or coconut milk for a lighter option)
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente (about 8-10 minutes) and reserve 1 cup of pasta water.
  2. Sauté Chicken: In a skillet, melt 2 tablespoons of butter over medium heat. Season chicken with salt and pepper, cook for 6-8 minutes until golden brown, then set aside.
  3. Create the Sauce: In the same skillet, add remaining butter, sauté garlic and onion for 3-4 minutes until translucent.
  4. Add Cream and Broth: Pour in heavy cream and chicken broth, stir in Italian seasoning and red pepper flakes. Simmer for about 5 minutes until slightly thickened.
  5. Combine Pasta and Chicken: Return chicken and drained pasta to skillet, toss until evenly coated and heat on low for 2 minutes.
  6. Serve: Top with grated Parmesan and fresh parsley if desired, and enjoy warm!

Notes

For a lighter option, replace heavy cream with coconut milk. Add vegetables like spinach or sun-dried tomatoes for added nutrition.
